Mmmmm..... fall....pumpkin.....mmmmm.
Blend:
1/2 cup kefir
1/4 cup coconut milk
1/4 cup raw goat milk (or whatever milk you like)
4 heaping tablespoons pumpkin puree
1 pastured egg yolk
1 tablespoon coconut oil
half frozen banana
1/2 tablespoon pure maple syrup or raw honey
4 drops liquid stevia
to taste:
vanilla
cinnamon
ginger
cloves
nutmeg
Sounds yummy! I think the kids and I will try it for breakfast tomorrow. Do you think it would be good without the banana? I don't have any on hand.

The banana just adds to the sweetness so you may want to add a bit more maple syrup, honey or stevia. Or not! ;) my kefir just tends to be a bit sour.

We tried it today and we loved it. Thanks so much. I did not have banana, and we don't care for stevia. So I added about 2 tbls maple syrup instead. Yum!
I might try warming it up just a bit next time. I had some warm pumpkim milk drink from Starbucks and it was so yummy, I wanted to recreate it at home. I'm sure theirs is awful health wise. but this taste a lot like it.
Thanks again!

can you use a whole egg instead of just the yolk? Looking forward to trying this!

Yumm! We're going to try this for sure. We love kefir smoothies - but usually just do chocolate. This will be fun to try, to have a different flavor! Thanks.

This looks great. I've been adding pumpkin ice cream to make pumpkin kefir smoothies.
Amy I remember reading to just use the yolks when making smoothies, I forget the reason why though.
