I might as well rename this blog 'the kefir smoothie blog'. That seems to be the majority of my postings. Truth is, since this summer when I gave up protein powders and started making my own kefir I've found numerous ways to make them nutritious.
This summer I also fell in love with fresh beets from the farmers market. Roasted, peeled, and then chilled. I could eat them plain like apples straight out of the fridge. So while I was experimenting with vegetable fermentation I decided to make some beet kvass. While I love beets, this was not a drink I could get down straight from a glass.
Again, not wanting to let anything go to waste I decided to pour my beet kvass into an ice cube tray and freeze it. Now when I make a kefir fruit smoothie I can pop one of the beet cubes out and throw it into the mix. Blend it together with whatever frozen or fresh fruit you have, maybe a pastured egg yolk, some coconut oil or milk and blend away. I can taste the beet kvass a bit, but it's not overpowering. I'm not sure how much this small amount does nutrient wise - but I've found a way to include beet kvass into my diet and look at what a pretty pink color it makes my smoothie!
I'm with you when it comes to beets. I could eat them all the time.
Making a smoothie is way it such a great idea. I'll need to give it a try since I make both kvass and kefir.

How long did you let your beet kvass ferment befor you drank it?
